• 1 pound cooked shrimp
  • 2 plum tomatoes, diced
  • 2 avocados, diced
  • 1/2 cup red onion, diced
  • 1 jalapeño or habanero, diced
  • juice from 1 lime
  • 1/4 teaspoon kosher or sea salt
  • 1/4 teaspoon freshly cracked black pepper
  • 1/2 cup chopped cilantro
  • 1 Tablespoon olive oil (optional)

Chop your shrimp into small pieces, then place in a bowl. Combine all ingredients together, adding the cilantro last. Taste to see if your salsa needs more lime juice or seasonings, then if desired, drizzle with olive oil. Serve in martini glasses or in a large bowl, with chips!
