AIMEE'S AVOCADO SHRIMP BOATS
The watermelon-red onion-cilantro combination with avocado and shrimp is an absolute treat!
- 2 large Florida avocados
- 2 cups watermelon, chopped
- 1/2 cup cilantro, chopped
- 1/2 cup red onion, diced
- 1 habanero, diced (if desired)
- Juice of 1 lime
- 1/2 pound of cooked shrimp, chopped
Cut avocados in half, then place on plate or platter. Mix together watermelon, cilantro, red onion and habanero together. Add shrimp then stir all together. Scoop into the center of the avocado halves, then squeeze fresh lime juice over the top. Enjoy!
