AIMEE'S BACON WRAPPED SHRIMP & SCALLOPS

 

  • 1 pound of jumbo shrimp, peeled and deveined
  • 1 pound of bacon, cut in half crosswise
  • 1/2 cup brown sugar
  • 1 teaspoon cayenne pepper

Preheat oven to 425 degrees.  Season the shrimp if you would like - this is optional.  You could also use a maple flavored bacon, and not use any seasoning.  Wrap half a slice of bacon around each piece of shrimp.  Secure with a toothpick if needed.  (For the scallops, wrap the bacon around the sides of the scallop and secure with a toothpick).  In a separate bowl, stir together brown sugar and cayenne.  Dredge the wrapped seafood in the brown sugar mixture, or sprinkle mixture on top.  Place on baking sheet that is lined with foil or wax paper, and bake for about 12 to 15 minutes.  You will see when the bacon is done, it is time to eat!
