Easy, delicious pastries - what more could we want for breakfast?
AIMEE'S BLUEBERRY PASTRIES
Pastry ... my weakness. One of them. This takes so little time, it is the perfect breakfast or brunch item or even for dessert!
- 2 sheets of puff pastry, thawed
- 1 egg, beaten with 1 teaspoon water
- Blueberry pie filling
- granulated sugar (for topping)
On a floured surface, roll out one sheet of puff pastry. Cut into four even squares. Repeat with other puff pastry. Place 2 to 3 Tablespoons of blueberry pie filling in the center of pastry. Fold into triangles or rectangles, sealing the edges with your fingers or with a fork. Make an egg wash with beaten egg and water, and then brush on top of pastry. Sprinkle granulated sugar on the top. Bake in preheated 350 oven for 30 to 35 minutes or until golden brown. These are best when hot!
