AIMEE'S BREAKFAST FRUIT PARFAITS TO GO
2 cups low-fat Greek yogurt (I used Cabot low-fat)
3 Tablespoons honey
1/2 teaspoon coconut extract (or you may use almond extract or vanilla)
2 cups frozen (or fresh) mango, thawed
2 cups frozen (or fresh) peaches, thawed
In a blender, blend frozen or fresh mangos and peaches (can use any fruit). Pour into a container and refrigerate until ready to use. Mix Greek yogurt, honey and coconut extract (or you may use almond extract or vanilla). Next, spoon the "fruit on the bottom" mixture into your small cup, then add the yogurt mixture then more fruit. Cover and refrigerate, on busy mornings you are ready to eat on the go!
