AIMEE'S BREAKFAST SANDWICHES TO GO
No need to go through the drive-thru on busy mornings! Make these delicious breakfast sandwiches, wrap them up and before you leave in the morning, just heat it in the microwave.

2 eggs, scrambled
1/4 cup fresh spinach
cheese to top eggs
1 Tablespoon low-fat Greek yogurt (I used Cabot low-fat Greek)
freshly cracked black pepper
thinly sliced deli ham and/or cooked bacon
Scramble the eggs with the fresh spinach, then set aside. Place your favorite cheese on top of the eggs to melt while the eggs are still warm. On each side of the English muffin, spread the Greek yogurt in place of mayonnaise. Add cracked black pepper, then place the ham and/or bacon. Top that with the cheesy eggs, then add the top of the English muffin. Wrap in plastic wrap and either eat "on the go," or allow to come to room temperature before refrigerating.
