CHEESE PENNIES

You’ll find these at every Southern bridal shower or baby shower, and sometimes the wedding receptions!  Just kidding.  These are everywhere down here, though.  Another great one from my Mom with a few added "kicks" for heat..

  • ½ cup of butter, softened (which is 1 stick) 
  • 1 ounce package of onion soup mix (dry)
  • 1 cup all-purpose flour
  • 1 teaspoon ground cayenne pepper
  • 4 cups (16 ounces) shredded cheddar cheese (I use sharp)
  • drop or two of water

Mix all ingredients together in a mixing bowl.  Place dough in refrigerator to chill for about half an hour.  Remove from refrigerator and cut the dough in half.  Roll each half into a log shape; this is where you might need to add the drop of water.  Wrap each with wax or parchment paper, and chill for an hour.  Cut into slices, about a quarter inch thick.  Line a baking sheet with parchment paper or foil for easy removal.  Preheat your oven to 350 degrees, and bake for about 20 minutes, or until lightly browned.  (If making ahead, store in airtight container).
