Pecan pie is good, but it ... how can I say this ... it would not be my first choice from a dessert buffet.  That being said, my Grandmother Jackson makes a killer pecan pie.  So I added chocolate and Jack Daniels to her recipe!  This makes two pies.

  • 2 cups pecans halves
  • 1 bottle dark Karo syrup
  • 4 whole eggs
  • ½ cup stick of butter, melted
  • pinch of salt
  • 1 teaspoon vanilla
  • big splash of whiskey** (optional)
  • 1 cup chocolate chips
  • 2 pie crusts (homemade or deep dish, store-bought)

Put pecans in the bottom of your crusts first; then add the chocolate chips to the pecans.  Whisk eggs, then add melted butter, Karo syrup, salt, vanilla and whiskey if using, and mix all together.  Pour all other ingredients on top of pecans and chocolate chips.  Place pie pans on a cookie sheet and bake 350 until it is set; 50 to 55 minutes.  As my Grandmother taught me, “You will be able to tell if it’s ready, because the pie will either jiggle when you move it, or it won't."  (Because it will look set.)
