Many people enjoy Coconut Cake for Easter, so I've made it a bit simpler by enjoying Coconut Cupcakes for Easter! Here is my easy Coconut Buttercream frosting recipe for either cakes or cupcakes!



  • 2 sticks unsalted butter, softened
  • 3 1/2 cups powdered sugar, sifted
  • 1 Tablespoon vanilla extract
  • 1 Tablespoon coconut extract
  • 3 Tablespoons heavy cream

Beat the butter to cream it and make it soft and perfectly whipped/creamed. Sift the powdered sugar then slowly, slowly add into the butter mixture. Beat together until it is a crumbly mixture. Add the coconut extract, vanilla extract and heavy whipping cream, then increase the speed. If your icing is too stiff, add a bit more heavy cream.
