The most recent food question/survey results from my Not the Perfect Cook Facebook page were from this question, "When you think of coconut, what flavor comes to mind?" These coconut popsicles are delicious, easy to make, and the perfect way to cool down from this heat!
AIMEE'S EASY HEALTHY COCONUT-CHOCOLATE POPSICLES
- 1 can coconut milk
- 2 Tablespoons powdered sugar
- 1/2 teaspoon almond extract
- 1 1/2 teaspoons vanilla
- 1/2 cup chocolate chips
- (you could also use 1/2 cup to 1 cup of pineapple, mango, papaya or any other fruit, you desire)
Mix all together then pour into small paper cups. Sprinkle chocolate chips to the bottom of the cup and also to the mixture after pouring inside cup. Freeze for about 20 - 30 minutes, then insert popsicle sticks into the center. Allow your mixture to freeze for about four hours. Peel the paper cup off or just allow your hand to hold the mixture, then the popsicle will "pop" out of the paper cup holder.
