Looking for a new, healthy side dish that tastes fantastic? Try this "super food," kale! I sauteed it in coconut oil (another healthy option that tastes great) and gave it some sweet and heat with the dried cranberries and red pepper flakes. Eating healthy never tasted so good!
AIMEE'S COCONUT SAUTEED KALE
- 1 1/2 Tablespoons coconut oil
- 2 large bunches of kale, washed and stems removed
- 1 teaspoon - 1 Tablespoon red pepper flakes (depending on how hot you like it)
- 1/2 teaspoon sea salt
- 1/4 cup dried cranberries
In a large pan, melt the coconut oil over medium high heat. Add kale and stir to coat all pieces with the coconut oil. Add red pepper flakes, sea salt and then cover. Cook covered for 5-7 minutes, then remove from pan and add dried cranberries.
