Don't order out, or take out ... take in! This chicken stir fry is so healthy and so easy, you're going to love it!

AIMEE'S TAKE-IN, NOT OUT, EASY CHICKEN STIR FRY

Ingredients:

1 teaspoon coconut oil

1 pound boneless, skinless chicken breasts (or thighs), cut into strips

1 small red onion, cut into strips 

2 cups fresh broccoli florets

1 cup sliced carrots (in long, thin strips)

1 red bell pepper, sliced into long strips

1 clove of garlic, minced

3 Tablespoons peanut butter, melted

1 Tablespoon reduced sodium soy sauce

1 Tablespoon ginger, minced

1 Tablespoon hot sauce (my absolute favorite hot sauce is Papi's Joe's!)

Sesame Seeds for topping

Directions:

Heat coconut oil in a skillet. Add the chicken and red onion and cook for about 4 to 5 minutes. Right before the chicken is cooked through, add the rest of the vegetables to the pan. In a small bowl, heat the peanut butter in your microwave just to loosen it; about 15 to 20 seconds. Add the soy sauce and ginger to this mixture, then pour it into the pan and stir everything together, to coat. Next add the hot sauce. Serve over a bed of rice and top with sesame seeds. Enjoy!
