• softened butter
  • ½ cup ricotta cheese
  • favorite seasonings to taste 
  • fresh spinach
  • 2 slices Mozzarella/Provolone/Brie or Gruyere cheese per sandwich (use whatever your favorite cheese is)
  • **optional is slices of apple or pears
  • bread (sourdough is especially delicious!)
  • marinara sauce (heated)

Mix 1/2 cup ricotta cheese with your favorite seasonings or fresh herbs.  Spread half ricotta mixture on one slice of bread, add spinach, provolone (or mozzarella cheese), then repeat with second slice.  Next, place other slice of bread on top.  Spread a small amount of softened butter on bread, then cook on both sides until cheese is melted.  Serve with your favorite marinara sauce for dipping!
