Quick and easy dinners don't have to be lacking in taste. Make this easy take on the classic Monte Cristo sandwich. No milk or heavy cream? Look in your freezer ... vanilla ice cream makes a delicious substitution! 


Good bakery bread; white bread, Sourdough or your favorite sandwich bread

4 thick slices of chicken or turkey deli meat 

4 thick slices of ham

2 slices of bacon (optional)

2 slices swiss cheese


2 eggs

1/2 cup heavy cream or 1/2 cup vanilla ice cream, softened (see note)

1 Tablespoon butter

1 cup Aimee's Pumpkin Jam (or Pumpkin Butter)

Spread mayonnaise lightly on bread then add the meat (bacon slices optional) and cheese. Press sandwich together. Beat together 2 eggs and 1/2 cup heavy cream. (True story: When I ran out of heavy cream and did not have milk at the station for this shoot, I panicked. I saw that I had vanilla ice cream from another recipe, so I added 1/2 cup melted vanilla ice cream to the eggs. It was so delicious; just a hint of sweet that the crew loved; and it has now become my favorite new way to make this!) Dip the sandwich through the egg mixture then add to heated skillet with 1 Tablespoon butter (or cooking spray). Cook as you would a grilled cheese sandwich. Serve with pumpkin butter on the side. If desired, you can sift powdered sugar over the top of your sandwich.
