You can use deli crust, but here's how to make your own.

  • 3 cups all purpose flour
  • pinch (about 1 Tablespoon) kosher salt
  • 1 packet of yeast (or 2 ¼ teaspoons yeast from a jar)
  • 1 cup warm water (water too hot will kill the yeast)
  • 1 teaspoon sugar
  • 1 long squeeze - about 1 Tablespoon of honey (I have never measured the amount)
  • 1 teaspoon olive oil

In a small bowl or glass measuring cup, add yeast and sugar to warm water.  You will see the yeast mixture “blossom” after about 5 minutes and you will know that it is ready.  Preheat the oven to 400.  Grease your pizza pan.  In a food processor, pulse flour and salt.  Slowly add the yeast mixture, then the squeeze of honey and olive oil.  It will form a ball in your food processor, and then take it out and knead for a minute or two.  Place in a bowl that you have greased with just a small amount of olive oil.  Let it rise in a warm place for an hour.

Roll pizza dough out onto well-greased pizza pan, stretching all the way to the edges.  Top with your favorite pizza toppings then bake for 10 minutes.  Slide pizza off of pizza pan and bake directly on oven rack for 8 to 10 minutes.  Remove, slice and enjoy!

  • 1 bell pepper (I like red) chopped
  • 1 onion (red, yellow or white, whatever your preference), finely diced
  • 3 cloves of garlic, minced
  • fresh mushrooms, sliced
  • 3 cups fresh spinach
  • 1 Tablespoon olive oil
  • freshly ground black pepper
  • crushed red pepper flakes (optional)
  • 1 cup ricotta cheese
  • 2 cups Italian cheese
  • crumbled feta cheese

Saute bell pepper, onion, mushrooms and garlic in olive oil.  Add spinach and black pepper and cook until spinach is wilted; about 2 to 3 minutes.  It will look like you have a lot of spinach, but it will cook down to almost nothing!  Set aside on a paper towel lined plate, then "blot" the mixture with more paper towels.  (This is to ensure that your pizza is not soggy).

Michala’s favorite pizza is Hawaiian pizza.  So for that, you need:

  • Red sauce
  • pineapple slices (patted dry)
  • Canadian ham, regular deli ham or prosciutto
  • Mozzarella cheese

  • 1 cup ricotta cheese
  • pinch of salt
  • pinch of pepper
  • 2 cups cheese of your choice
  • crumbled feta cheese
  • red pepper flakes for heat

Stir seasonings into ricotta, then dollop ricotta mixture (by rounded teaspoon) all over pizza.  Sprinkle cheese on top of ricotta mixture, then bake.
