Looking for a healthy fruit snack, and one that will cool you off?  This is it!  This is just fruit, nothing else (unless you add juice or wine to make the clear pops).  Super yummy, super delicious, super easy and super cool!
 

AIMEE'S FRUIT POPSICLES 

  • 2 cups watermelon, cut into chunks
  • 2 peaches, peeled and seed removed
  • 4 strawberries
  • In a blender, puree the watermelon, peaches and strawberries together.  In small paper cups, place the following throughout the cups:
  • 20 blueberries
  • 2 kiwis, peeled and sliced
  • 20 raspberries
  • 4 strawberries, sliced
  • 2 peaches, peeled and sliced
  • popsicle sticks
  • paper cups

*The number of blueberries and raspberries is just an estimate.  Use however many or few as you desire; this is just to place inside of the cups to freeze for the popsicles.  Place the fruit into the cups, and press the kiwi slices up against the edges of the cup.  Pour the watermelon mixture into the cups, over the fruit and place in the freezer.  (Place your cups on a cookie sheet or inside of a muffin pan to make it easier to go from counter to freezer).  After 30 minutes to an hour, place popsicle sticks in the center of the fruit mixture, then return to freezer.  Allow to freeze for about 2 to 3 hours.  To remove cup, either peel paper away, or just hold the popsicle cup in your hand for a few seconds, and the cup will slide right off.  
 

For Clear Fruit Pops:

  • 1 1/2 cups total white grape juice (I use Publix brand)
  • for grownups; use 1 1/2 cups Riesling (I used Black Box Riesling)

Use the above fruit listed, or any mixture that you desire in cups, then pour white grape juice or Riesling over fruit; about 1/2 cup juice or wine, per cup.  Allow to freeze for about 30 minutes to an hour, then insert popsicle sticks.  Return to freezer and allow to freeze for about 2 to 3 hours.  To remove cup, either peel paper away or just hold the popsicle in your hand for a few seconds and the cup will slide right off.
