Caramelizing onions just makes them taste like candy. Adding goat cheese to anything, makes everything taste even better! Today, I'm showing you how to make quick and easy (still delicious and healthy) Goat Cheese and Caramelized Onion Quesadillas.

  • 1 Tablespoon olive oil
  • 2 yellow onions, thinly sliced
  • 3 cups fresh spinach
  • 1 cup sliced mushrooms
  • 1 teaspoon crushed red pepper flakes
  • 1 (4 ounce) package of goat cheese, softened
  • 6 small flour tortillas (or wheat, spinach, etc.)
  • 1/2 cup fresh cilantro, chopped
  • 1 avocado, chopped

Heat your skillet over medium heat and add olive oil. Add the slices of onions and cook until they are soft, continuing to stir, every 5 to 10 minutes. (If the onions begin to dry out, just add a Tablespoon of water; more if needed). You will cook the onions for about 20 minutes; the longer you cook them, the more "caramelized" and sweet they are. About 10 minutes into cooking, add the spinach, mushrooms and crushed red pepper flakes. Take your flour tortillas and spread the softened goat cheese on one side, then add cilantro to the goat cheese. Next, add the spinach and caramelized onion mixture. Fold the tortilla in half, then place in the same skillet, or a new skillet, (lightly coated with cooking spray) and cook until they are lightly browned and crispy on both sides. Top with chopped avocado, if desired.
