Today's recipe is based on a trip to Charleston. A viewer wrote to me and asked if I could help her recreate the Hoppin' John's she had in Charleston, South Carolina; but without the bacon and bacon fat, or ham hocks. I made these healthy by adding more flavor by making these spicy, so I called these, "Hoppin' Juan's."


  • 1 Tablespoon olive oil
  • 1 teaspoon butter
  • 1/2 bunch of green onions, finely diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 2 cloves of garlic, finely minced
  • 2 cans black eyed peas, drained and rinsed
  • 1/2 teaspoon cayenne pepper
  • 2 Tablespoons hot sauce
  • 1 cup reduced sodium chicken broth
  • more green onions for topping

Heat skillet and melt butter into olive oil. Add green onions, bell peppers and garlic and cook until softened; about 5 minutes. Add black eyed peas, cayenne pepper, hot sauce and chicken broth. Cook for about 10 minutes, then enjoy!]
