Need something warm and comforting? Have trouble sleeping? This is a Hot Chocolate Nightcap that you will love.

Watch Aimee make this!

My Great Aunt Earlene swears by a nightcap or a "little toddy," so give it a try!

Makes 2 mugs

2 to 3 cups vanilla soymilk (I drink Silk; but you can use milk, almond milk or even half and half for a rich treat)
1 cup chocolate chips
1 shot bourbon (I used Jim Beam Single Barrel)

In a small pot, heat your soymilk (or milk) until almost boiling, whisking to prevent film on the top. Place chocolate chips in a heat proof bowl. Remove soymilk from heat and pour over chocolate chips. Whisk chips then add bourbon to the mixture. Pour back into pot and heat for 30 seconds to a minute, just to heat all the way through. Pour into mugs and add homemade whipped cream and chocolate chips on top.

1 cup heavy whipping cream
3 Tablespoons powdered sugar
1 Tablespoon bourbon (I used Jim Beam Single Barrel)

Chill your bowl and beaters (or whisk) in the freezer until ready to mix. In cold bowl, beat together the heavy whipping cream, then add the powdered sugar and bourbon. Beat until soft peaks form. Store in an airtight container in your refrigerator.
