Feliz Cinco de Mayo!  Today is the last of the month-long international segments, and we're ending it in Mexico. Huevos Rancheros is a delicious, super easy dish to make:


  • 4 corn tortillas, warmed
  • 4 eggs
  • Blender salsa (recipe below)
  • queso fresco
  • fresh cilantro

For the Huevos:

Wrap corn tortillas in aluminum foil and place in the oven on warm (or 200; just a low heat setting).  Heat a non-stick skillet, add a bit of cooking spray and fry your eggs.  Remove corn tortillas and place tortillas on the plate.  Place fried egg on top of tortilla then add salsa on top of egg, top with queso fresco and fresh cilantro.



  • 2 cans tomatoes with chilies
  • 1 onion, quartered
  • 1 handful of cilantro
  • salt and pepper (to taste; just a pinch)
  • juice from 1 lime 

Place all ingredients in a blender and mix well!  Store any leftover salsa in an airtight container in the refrigerator.  This is extra spicy, so if you want to tone down the heat, use 1 can of tomatoes with chilies and one can of plain, diced tomatoes.
