I love to let ice cream soften, and put it in a large mixing bowl.  Then, I like to add cookies or candy to the ice cream, and pour into a pie crust, then freeze.  Some examples are:

  • Oreo Peppermint Ice Cream Pie
  • Banana Split Ice Cream Pie
  • Key Lime Ice Cream Pie
  • Kahlua Chocolate Ice Cream Pie
  • Fudge Brownie Ice Cream Pie

It is also great to add your favorite “mix-ins” to the ice cream.  You can add cheesecake bites, you can freeze your key lime pie, then cut into chunks and mix into vanilla ice cream; add raspberry sauce, strawberry sauce, blueberry sauce to vanilla ice cream.  Or, you can add cookie dough bites to vanilla or chocolate ice cream.  Make your own peppermint ice cream by adding 1 teaspoon peppermint/mint flavoring and broken pieces of peppermint candy into vanilla ice cream.  I personally like to add chocolate sauce to the peppermint, and use a chocolate crust!  It is a beautiful and delicious treat any time of year, but especially for Christmas time meals!

Your options are limitless with candy bar add ins, extract flavorings, etc.  Drizzle in thin lines, chocolate ganache (or syrup) to make the top of the pie look nice, and freeze beautifully!
