Joining me in the kitchen today are my sweet friends, Lulu and Delaney West. We took one of their favorites, (banana pudding) and made individual banana pudding pies!

(With special help from my dear, sweet friends, Lulu and Delaney West!)

Makes 6-8 individual Banana Pudding Pies

  • 3/4 cup sugar
  • 1/3 cup all purpose flour
  • 2 whole eggs
  • 4 egg yolks (keep the whites for omelets)
  • 2 cups whole milk
  • 1 1/2 teaspoons vanilla extract
  • 4 bananas, sliced
  • vanilla wafers (Lulu likes to add chocolate chip cookies!)
  • homemade whipped cream (recipe below)

In a large cast iron skillet or saucepan, whisk sugar, flour, eggs, yolks and milk together. Cook over medium-low heat, whisking constantly, until your mixture is thick like pudding; this will take about 10 to 12 minutes. Once it reaches this thickness, remove from heat and add vanilla. Refrigerate for 4 to 6 hours then top with homemade whipped cream and a banana slice in the center.

  • 2 cups heavy cream
  • 5 Tablespoons powdered sugar

To make homemade whipped cream, with a whisk or hand mixer, beat heavy cream. (Always start with a cold bowl and beaters that you have placed in the freezer)  Add sugar then whisk or beat until desired consistency for whipped cream. Refrigerate any leftovers in an air-tight container.

To assemble the individual pies, place four or five vanilla wafers at the bottom of ramekins. Next, add banana slices, then add the banana pudding pie filling; then top with homemade whipped cream. Repeat layers if desired!
