No way was it Christmas around our house as a kid without my mom making this cake! Mom would use this cake for Jesus' birthday cake, and now we carry out the same tradition. This is a lot of fun to make with your children!  For the various seasons, play around with the jello flavors and colors!  Purple and yellow for Easter ... Red and Blue for the 4th of July ... your child’s favorite colors for any day celebrations!

  • 1 package white cake mix
  • 1 (3 ounce package) red Jello
  • 1 (3 ounce package) green Jello
  • 2 cups boiling water
  • 2 containers (8 ounces each) frozen whipped topping, thawed

Prepare cake as directed on cake box. Pour batter into 2 round 8 or 9 - inch pans, greased. Bake as directed. Cool for 10 minutes on wire racks and remove from pans. Cool completely. Place cake layers top side up back into the cake pans. Prick each layer with a fork. Pour 1 cup boiling water over red Jello in bowl. Stir until dissolved. Spoon over 1 cake layer. Repeat with the green Jello. Refrigerate at least 3 hours. Dip one layer in pan into hot water for 10 seconds, invert on plate, shaking gently to loosen. Remove pan. Spread layer with 1 cup frozen whipped topping. Remove remaining layer from pan as above, invert on top of first layer. Frost with remaining frozen whipped topping. Garnish with red and green gumdrops, if desired. Another way to decorate is using red and green sugar crystals.
