MEXICAN GRITS

  • 3 cups water
  • 1 cup grits 
  • juice of one lime
  • salt (about a teaspoon or so)
  • cumin (about 1/2 teaspoon to 1 teaspoon)
  • dash of cayenne pepper
  • cheese (any flavor that you like, shredded)
  • fresh cilantro

In a saucepan, bring water to a boil. Add salt, lime juice, cumin, cayenne pepper and grits. Stir well, then reduce heat to medium-low and cover. Cook, stirring every couple of minutes, to prevent from sticking to the bottom. After about 10 to 12 minutes stir in the cheese. Right before serving, sprinkle chopped, fresh cilantro on top.
