As the month of February makes us think about date nights, here is a great and easy, "date night in" meal! I call it, "Whine for Mussels" because the white wine sauce will make you "whine" for more!

  • 2 pounds of mussels, washed (Also check to make sure there are none that are open. If so, toss those)
  • 2 Tablespoons butter
  • 1 Tablespoon olive oil
  • 3 cloves of garlic, minced
  • 1 shallot, diced
  • 3 cups white wine (I used a Chardonnay)

Heat your 2 Tablespoons butter, 1 Tablespoon olive oil, then add your garlic and shallot. Next add 3 cups of Chardonnay; bring to a boil and add 2 pounds mussels (that you have washed and checked to make sure none are open). Place the lid on your pot and keep your eyes on it. Stir after 1 minute. Gently shake your pot over the burner. This can take anywhere from 3 to 5 minutes. They will open when they are done. Serve with crusty bread and enjoy that delicious wine broth!
