Every good Southerner knows you have to eat greens and black eyed peas for New Year's, for good luck! Here is a twist ... Mix spinach for your greens and combine with black eyed peas, spicy tomatoes and puff pastry. A delicious appetizer for ringing in 2013!


  • 1 roll puff pastry, thawed 
  • 1 can black eyed peas, drained and rinsed
  • 1 can tomatoes with chilies, liquid drained
  • 1 bag spinach 
  • 1/2 onion, finely chopped 
  • 1 Tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon cayenne
  • 1 cup pepper jack cheese, grated
  • 1 egg, beaten with splash of water for egg wash

Preheat oven to 375. In a skillet, sauté onion in olive oil. Add spinach and cook down. Drain black eyed peas and rinse and drain again. Drain liquid. Mix black eyed peas and tomatoes together. Add cumin and cayenne, stir together. Roll out puff pastry on a floured surface. Lay out spinach mixture across puff pastry. Sprinkle black eyed peas and tomatoes on top of spinach. Starting at long end of the puff pastry, roll up then brush with egg wash. Next, slice into 1/2 inch pinwheels. Place pinwheels on pizza stone or a lightly greased cookie sheet. Top each pinwheel with shredded cheese. Bake for about 25 to 30 minutes until lightly browned.
