AIMEE'S EASY PALETAS


AIMEE'S MANGO-HABANERO PALETAS

  • 2 mangos, peeled and cut into chunks
  • 1 habanero pepper, finely diced and seeds removed (optional)
  • 1 lime, juiced
  • 1 teaspoon sugar

In a blender, blend together the mango, lime juice, sugar and if using, habanero. Pour into 3 ounce cups and place a popsicle stick in the center. Place in the freezer to set; about four hours.
 

AIMEE'S STRAWBERRY-JALAPEÑO PALETAS

  • 8-10 strawberries, stems removed
  • 1 teaspoon sugar
  • 1 jalapeño, finely diced and seeds and ribs removed
  • 1 lime, juiced

In a blender, blend strawberries, sugar, pepper if using and lime juice. Pour into 3 ounce cups and place a popsicle stick in the center. Place in the freezer to set; about four hours.
 

AIMEE'S COCONUT-BANANA PALETA

  • 1 (13.5 ounce) can coconut milk
  • 2 bananas 
  • 1 teaspoon vanilla extract
  • 1 teaspoon honey (you can use 1 Tablespoon even, to sweeten it even more)

In a blender, blend coconut milk, bananas, vanilla and honey. Pour into 3 ounce cups and place a popsicle stick in the center. Place in the freezer to set; about four hours.
 

AIMEE'S COCONUT-AVOCADO-LIME PALETA

Now this one is really a fun flavor combination!

  • 1 (13.5 ounce) can coconut milk
  • 1 ripe avocado
  • 1 teaspoon vanilla
  • 1 lime, juiced
  • 1 Tablespoon honey

In a blender, blend coconut milk, avocado, vanilla, lime juice and honey. Pour into 3 ounce cups and place a popsicle stick in the center. Place in the freezer to set; about four hours.
 

AIMEE'S WATERMELON LIME MINT PALETA

  • 2 cups of seedless watermelon, cut into chunks
  • 1 lime, juiced
  • 2 Tablespoons mint simple syrup (recipe below)

In a blender, blend watermelon, lime juice and simple syrup. Pour into 3 ounce cups and place a popsicle stick in the center. Place in the freezer to set; about four hours.
 

AIMEE'S MINT SIMPLE SYRUP

  • 1 cup sugar
  • 1 cup water
  • 4 large sprigs of mint

In a small saucepan over medium heat, melt the sugar into the water and add the mint. Stir until the sugar is completely dissolved. Remove from heat and allow to cool. Once cool, remove the mint leaves. Store in a mason jar or an airtight container.
