AIMEE'S PUMPKIN PIE PASTELITOS
1/2 cup canned pumpkin puree
2 Tablespoons brown sugar
1 teaspoon pumpkin pie spice
Mix all together then set aside.

1/2 block of your favorite cheese; I'm using Cabot Seriously Sharp
garlic salt for topping
AIMEE'S CHOCOLATE PASTELITOS
I'm using Seattle Chocolates for their #chocolategives hunger awareness campaign. Leftover Halloween candy is also great for this one!
Roll out each sheet of puff pastry and cut into four equal squares. In the center of each square, place the filling that you will use. (For the pumpkin pie filling, just use about 1 Tablespoon in the center). For the cheese, place one square of cheese in the center. For the chocolate, add your favorite piece of chocolate in the center. Fold the end of each square over the filling and press to close with your fingers. Make three slits/openings down the center of each pastry with a knife. Place on a parchment lined cookie sheet. Make an egg wash with beaten egg and water, then brush on top of pastry. Sprinkle tops of the pumpkin with with sugar and pumpkin pie spice; sprinkle the cheese with garlic salt and sprinkle the chocolate with sugar, and bake at 350 for 30 to 35 minutes or until golden. Enjoy!
