PEACH COBBLER

All summer long, I went on and on and on about the wonderful peaches I bought at the produce stand.  Tonight, I pulled out a bag of peaches and made a peach cobbler.  Yummalicious.

  • 2 cups fresh fruit (peach, blackberry, blueberry, raspberry - or even a combination! For added pops of flavor, zest an orange into your blackberries or lemon into your blueberries. Put peaches and raspberries together or blackberries and peaches; the various flavor combinations are wonderful!)
  • 2 cups sugar
  • ½ stick of butter
  • ¾ cup flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup milk

Mix fruit with 1 cup sugar.  Let stand.  Put butter in a 2 quart or a 9 x 13 inch casserole dish.  Place in 325 degree oven to melt.  Combine remaining sugar, flour, baking powder, salt and milk.  Pour over melted butter.  DO NOT STIR.  Spoon fruit on top of flour mixture.  DO NOT STIR.  Bake at 325 for one hour.
