AIMEE'S PEANUT BUTTER-CHOCOLATE FILLO ICE CREAM DESSERTS

I love desserts and I love friends.  Sometimes you might need quick and easy, not to mention, inexpensive. This is a beautiful treat to make for parties or for a small dinner gathering - and when desserts like this are bite-size ... need I say more:

  • 1 package mini baked fillo shells (freezer section)
  • Caramel Sauce; homemade or store-bought
  • 1 cup semi-sweet chocolate chips
  • 4 Tablespoons peanut butter
  • ice cream (flavor of your choice)
  • chopped pieces of peanut butter cup candies

Melt peanut butter and chocolate chips in microwave then spoon into bottom of shells, or drizzle caramel sauce at bottom.  Place on cookie sheet in freezer for about 15 to 20 minutes, until chocolate mixture is set.  Using a mini-scoop (melon baller) or two Tablespoons, working together; scoop ice cream into shells.  Sprinkle candy on top, drizzle remaining chocolate sauce on top and serve immediately or store in freezer until ready to enjoy.
