Watch Aimee make this lightened up, comfort food classic!
Cold weather often makes us crave comfort food. However, comfort food is often pretty heavy, or fattening. I've lightened up some macaroni and cheese and even added some vegetables to it, to make it not only healthier, but also a bit better for you:
AIMEE FORTNEY'S QUICK AND EASY VEGGIE MAC AND CHEESE
- 1 pound box of your favorite pasta (I used a rotini for this)
- 3 ounces reduced fat cream cheese
- 4 ounces cheddar cheese (I used Cabot Seriously Sharp Cheddar), grated
- 1 cup broccoli florets (frozen - if fresh, add to the pasta 4 minutes before cook time is completed, or you can leave it raw for the health benefits)
Cook the pasta, then drain, and reserve 1/4 cup of the pasta water. Place reduced fat cream cheese and cheddar cheese in a bowl. Microwave for about 45 seconds to one minute, or until melted. Add the drained pasta and broccoli florets to the melted cheese and stir well. If this mixture is too thick, you can add the reserved pasta water, to thin out the mixture, then just reheat.
