"Taste the rainbow" might be a catch phrase for candy, but we can taste the rainbow of good, healthy vegetables with this sandwich! You can grill, roast or saute your veggies, just be sure you eat them.
AIMEE'S RAINBOW VEGETABLE SANDWICHES WITH GOAT CHEESE
- 2 ciabatta rolls
- 1 Tablespoon olive oil
- 1 large red bell pepper, cut into strips
- 1 large orange tomato, cut into thick slices
- 1 large yellow squash, cut into rounds
- 1 purple (red) onion, cut into strips
- 4 portabella mushroom slices
- 1/2 cup baby spinach
- 4-6 leaves of fresh basil
- 4 ounces softened goat cheese
- kosher salt and pepper to taste
Toast the ciabatta rolls then set aside. Heat your olive oil in a large skillet over medium heat, and sauté the red bell pepper, yellow squash, purple onion slices and portabella mushroom slices. You can do these all at once or individually; it does not matter, and only takes about 5-7 minutes. Season with a small amount of kosher salt and pepper, as needed. Spread the softened goat cheese on the rolls, then add the spinach and basil. Add the cooked vegetables along with the tomato slices (which you can also sauté, if you desire. Roasting and sautéing just makes them even sweeter!). Eating a diet with more vegetables means you are lowering your risk for heart disease, obesity and certain types of cancer. So when you bite into this sandwich, know it not only tastes great, but it is so great FOR you! Your green, yellow and orange vegetables are high in Vitamins A, C and K. These are also excellent sources of potassium and calcium. Reach for those greens and pile them on everything you can, not to mention tossing into your smoothies!
