AIMEE’S RASPBERRY GOAT CHEESE SPREAD

  • 1 long roll of goat cheese (or two small)
  • 1/2 cup seedless raspberry jam, heated
  • raspberries for garnish
  • crackers of your choice

Place goat cheese on a platter in the center, and place raspberries around it for garnish.    In the microwave, heat seedless raspberry jam until it is runny; about 20 to 30 seconds.  Drizzle jam across middle of goat cheese and around the platter.  Serve with your favorite crackers and garnish with mint.
