Sugared Cranberries are very easy to make, they are beautiful and they make a great snack to "nibble on" as well as pop into drinks!  Save the steeping liquid to sweeten a "dry" champagne.  Also, this is a great way to serve champagne that is inexpensive, yet "step it up" - even on a budget!

  • 1 bag of cranberries
  • 2 cups sugar
  • 2 cups water
  • 1 cup sugar (that you run through the blender or food processor to make it extra-fine, for rolling cranberries)
  • Extra Dry Champagne

In a saucepan, combine 2 cups of sugar and 2 cups of water to make a simple syrup.  Stir until the sugar dissolves, then remove from heat.  Add cranberries and stir, then put mixture into a bowl.  Cover and refrigerate overnight or all day.  Remove from refrigerator and pour liquid into a jar to use as a sweetener for drinks.  (I use a colander for this; to remove liquid from cranberries).  In a pie plate, roll cranberries through 1 cup sugar.  Place on a cookie sheet to harden for a couple of hours, then store in an airtight container.

For Drink:

Place 1 teaspoon of cranberry steeping liquid at the bottom of champagne flute; add champagne then top with two or three sugared cranberries.
