AIMEE'S SUMMER ARUGULA SALAD

Some nights, you just don't want to heat up the kitchen. A simple, yummy meal can literally be as easy as opening a bag of arugula and adding last night's leftovers and your favorite toppings. You can take leftovers to turn a simple salad into a delicious, summer feast!  Add slices of peaches or mango to bring a tropical feel to your table.  I like to use pico de gallo for "dressing" and watermelon works as well:

  • 1 bag arugula 
  • 1 mango, peeled and sliced
  • 1 peach, peeled and sliced
  • 1 avocado, sliced
  • leftover chicken breast, cubed
  • pico de gallo
  • crumbled bacon (optional)

Add arugula to a bowl then arrange peaches and mango on top.  Add chicken and any other toppings that you would like.  Pico de gallo makes a delicious, healthy "dressing" but you may certainly add anything that you love.  Another healthy option - watermelon!  The juices from the watermelon can also act as a dressing, just as pico de gallo does.
