You can make peach cobbler, or if you do not have peaches, make blackberry, blueberry, cherry, etc. cobbler!

If you are able, freeze some of these wonderful summer fruits, so that in the winter, you are able to enjoy a delicious cobbler!

*A tip for removing the skins from the peaches. I will boil water in a small saucepan, and with a ladle, place the peaches, individually, in the boiling water. Leave them there for 30 seconds, then remove with the ladle, and place in a large bowl filled with ice and water. This will immediately stop the cooking process. After you have done this with your peaches, the skin will just fall right off when you peel them.

  • 2 cups fresh fruit (if using peaches, slice them)
  • 2 cups sugar
  • 4 Tablespoons of butter
  • 3/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk

Mix fruit with 1 cup sugar. Set aside. Place butter in a baking dish (can be round, or can be a 9 x 13 casserole dish). Place in the oven at 325 to melt. Combine the other 1 cup sugar, flour, baking powder and salt, stirring to mix well. Add the milk, and stir so there are no lumps. Pour over melted butter. DO NOT STIR. Spoon your fruit on top of the flour mixture. AGAIN, DO NOT STIR. Bake at 325 for 1 hour. ENJOY!
