Even a Sweet Potato Pie can be made healthier with a few twists!
AIMEE'S ORANGE SWEET POTATO PIE
My Grandmother makes sweet potato pie, and it is so delicious! However, she puts an entire stick of butter and 1 cup of sugar in it. I don't think you need that much, because the sweet potatoes ARE sweet, and I have added orange juice to add more flavor and a bit of sweetness!
- 3 large sweet potatoes
- 4 Tablespoons butter
- 1/3 cup sugar
- 1/2 cup orange juice
- 1 teaspoon vanilla
- 1 teaspoon cinnamon (optional)
- unbaked pie crust (homemade or store bought)
Bake sweet potatoes at 400 for 1 hour. Prepare pie crust and place into a 9 inch pie plate. (Or you may peel and boil them; then drain completely). Mix sweet potatoes, butter, sugar, orange juice, vanilla and cinnamon with a hand mixer in a mixing bowl until all ingredients are combined. Pour into pie crust and bake at 350 until bubbly and brown; about 40 to 45 minutes.
AIMEE FORTNEY'S HOMEMADE CINNAMON WHIPPED CREAM
Place bowl and beaters in freezer for at least 10 minutes prior to making whipped cream to ensure they are cold.
- 1 cup heavy whipping cream
- 1/4 cup to 1/3 cup sugar
- 1/2 teaspoon cinnamon
Pour heavy whipping cream into bow. Beat heavy whipping cream until it starts to thicken, and slowly add sugar. You can add any kind of flavoring that you desire, for this, add cinnamon, to make cinnamon whipped cream!
