I recently found some turkey breasts on sale, so I bought several. This is one of the easy and delicious ways I came up with to cook one, and it's perfect as we ease into Cinco de Mayo:

AIMEE'S TEQUILA-CITRUS TURKEY (OR CHICKEN)

  • Turkey breast (that is about 2.5 to 3 pounds) 
  • For the marinade: 
  • 1/4 to 1/3 cup freshly squeezed lime juice (from 2 limes) 
  • 1/3 cup orange juice 
  • 1/3 cup tequila (I used Familia Camarena)
  • 1/3 cup olive oil 
  • 1 teaspoon kosher salt 
  • 1 teaspoon black pepper 

Cut slits (holes) into the turkey with a sharp knife, and place the turkey in a casserole dish. Mix the marinade then pour over the turkey. Cover with plastic wrap and refrigerate for 30 minutes. Remove from refrigerator and line a cookie sheet or roasting pan with aluminum foil. Place rack on top of that, then place the turkey breast on top of the rack. Spoon just a couple of Tablespoons of the marinade over the turkey. Cook at 375 for 1.5 hours to 2 hours.
