TEXAS CAVIAR

  • 2 cans black eyed peas*, drained
  • 1 small can corn (drained)
  • 1 can Rotel (Hot), also drained
  • 2 Tablespoons red wine vinegar
  • 2 Tablespoons olive oil
  • couple of dashes of hot sauce (to your taste)
  • handful of cilantro, chopped
  • salt and pepper to taste
  • Sazón Completa (a couple of dashes)
  • ¼ cup green onions

Combine all ingredients, adding the cilantro last.  Stir to combine.  You may refrigerate at this point, or go ahead and serve with chips. **Black beans can of course be substituted, but don’t knock it ‘til you try it!  The spices and seasonings really flavor and bring life to the black eyed peas.  You can change/add anything to this recipe.
