No need to buy trail mix bars; just make these, on your own! Great for weekend snacks for after games, to tuck in your lunch, or for a healthy bedtime snack.
AIMEE'S TRAIL MIX CEREAL BARS
I lightened up my Great-Aunt Earlene's recipe to make these healthier!
- 1 1/2 cups multi grain cheerios
- 1 1/2 cups crispy rice cereal
- 1/4 to 1/2 cup ground flax seeds (grind in a coffee grinder, blender or food processor; much cheaper to grind your own)
- 1/2 cup dried cranberries
- 1/2 cup chocolate chips
- 1/2 cup honey
- 1/2 cup peanut butter
- 1 teaspoon vanilla
Place the cereal, ground flax seeds, cranberries and chocolate chips in a large bowl. Heat honey in a small sauce pot (spray measuring cups with cooking spray to measure honey and peanut butter) then add the peanut butter. Stir well until melted together, then remove from heat. Add vanilla, then pour the honey mixture over the cereal mixture. Mix well with a spatula, then press into a lightly greased 8x8 pan. Allow to firm up at room temperature, then cut into bars. Wrap in plastic wrap and enjoy!
