The great thing about making these whole wheat tortilla pizzas - - you can adjust the ingredients for however many people you have. If you are cooking for 1 or 2, don't use as many ingredients (OR - cook the mixture and put it in an air-tight container to use in another dish like breakfast burritos, pizza, etc.)  If you are cooking for 6 or 8 people, just add a bit more of everything. This is too easy not to enjoy and run with it:
 

AIMEE'S WHEAT TORTILLA PIZZAS

 

  • 6 to 8 Whole Wheat Tortillas (Use more or less as necessary)
  • splash of olive oil (or cooking spray)
  • 1 bag of fresh spinach
  • 1 small red onion, cut in long strips/rings
  • 1 clove garlic, minced
  • sliced mushrooms
  • 1 package crumbled feta cheese
  • 1 cup ricotta cheese
  • 1 cup shredded Italian cheese

Preheat oven 400 degrees.  In a medium sized skillet, saute red onion and mushrooms in splash of olive oil.  Add spinach and garlic, cook down until spinach has wilted.  Place tortillas on cookie sheet.  Top tortillas with spinach mixture, then add "dollops" of ricotta to each tortilla.  Next, sprinkle feta cheese on top, then sprinkle Italian cheese over entire mixture.  Bake at 400 for 10 minutes.  Enjoy!
