
Retail has their "Winter White" specials, so why not have a Winter White Special in your kitchen? This white bean soup is full of delicious "super food" vegetables that will taste too good to be healthy:
AIMEE'S EASY WINTER WHITE SOUP
- 2 Tablespoons olive oil
- 2 carrots, thinly sliced
- 2 cloves of garlic, diced
- 1 shallot, diced
- 1 large potato, diced (may use 2 small if that is what you have)
- 2 cans of cannellini beans, rinsed and drained
- 4 cups reduced sodium chicken broth
- 1 cup of water
- 1 cup white wine (I used Black Box Chardonnay)
- *1/2 cup reduced sodium chicken broth (additional)
- *3 Tablespoons cornstarch
- 1 cup freshly chopped kale
- 1 Tablespoon crushed red pepper
In a large soup pot, sauté 2 carrots, 2 cloves of garlic and 1 shallot in olive oil. Add 1 large diced potato, 2 cans of cannellini beans that have been drained and rinsed, then add 4 cups reduced sodium chicken broth, water and 1 cup white wine. Thicken this mixture, if desired, by mixing 3 Tablespoons corn starch with 1/2 cup cold chicken broth. Once mixed, add to the soup, and stir. Bring soup to a boil, then add 1 cup of freshly chopped kale. Add 1 Tablespoon crushed red pepper. Simmer for 30 minutes, covered. Enjoy with your favorite bread.
